GRANDMA PARSON'S BAKED BEANS


OVEN - 350 degrees

INGREDIENTS:

2 lbs. Great Northern (or Navy) beans uncooked
2 lg. onions chopped
salt/pepper to taste
1/4 cup molasses
4 TBSP brown sugar
1/2 lb bacon or 1/4 lb. salt pork

DIRECTIONS:

Wash beans and place in a cooking kettle. 
COVER beans with water to 2 inches above beans.
SOAK beans overnight

ADD enough water to cover expanded beans.
ADD onions, salt and pepper.
BRING to a BOIL and let SIMMER until beans are TENDER.
STIR in sugar and molasses.

PLACE beans in a baking dish and place strips of bacon on top.

BAKE at 350 degrees uncovered approximately 1 hour or until they reach desired thickness.

SWEET and SOUR CHICKEN AUNT LINDA'S


INGREDIENTS:

1 can jellied cranberry
1 small bottle light Catalina Dressing
2 lbs. boneless/skinless chicken (cubed)
1 packet dry onion soup mix
1 1/2 cup white or brown rice (before cooking)

DIRECTIONS:

COMBINE all ingredients (except rice) in a casserole dish;
COVER and REFRIGERATE
BAKE at 350 degrees for 1 hour, while cooking the rice.

SERVE over rice with a green vegetable

SERVES 4-6


FRESH TOMATO AVOCADO SALAD from AUNT JOYCE


INGREDIENTS: 

2 lbs. tomatoes, coarsely chopped
1 medium sized Avocado - diced About 1 cup
1/2 c. chopped celery
3 TBSP. salad oil
1 TBSP fresh lemon juice
1/8 tsp. salt
1 small garlic clove - very finely minced
Salad Greens

DIRECTIONS:

COMBINE tomatoes, avocado and celery in a bowl
COMBINE oil, lemon juice, salt, pepper, garlic
POUR over tomato mixture
TOSS lightly
COVER and Chill at least 1 hour
SERVE over crisp green salad greens

4 servings


MAMIE'S FROZEN PEACHES 'n' CREAM



INGREDIENTS/DIRECTIONS:

1 pint whipping cream (whip it)
ADD 1 cup of sugar
ADD 10 peaches which have been mashed
MIX
PUT in ice cube tray
FREEZE

YUMMY but oh those calories!


AUNT GENEE'S POLISH PORK/STEAK and SAUERKRAUT BAKE


Thick Chops with Sauerkraut & Apples ♥ KitchenParade.com, a country-style skillet, easy enough for a weeknight supper, special enough for Saturday company. One of my very oldest fall recipes.

OVEN 350 degrees

INGREDIENTS/DIRECTIONS:

POUR WHITE wine on pork chops or steak
PAN FRY the chops or steak in Crisco
OIL a roasting pan
PUT a layer of sauerkraut - chops/steak - then layer of Apple Rings, Onion Ring -
REPEAT - kraut, chops/steak - apple & onion rings
SPRINKLE caraway seeds on top
ADD 1/2 cup o' water
BAKE at 350 degrees for 1 hour.



MAMIE'S MACARONI and CHEESE


OVEN 350 degrees
Serves - 12

INGREDIENTS:

24 oz. elbow macaroni
Ritz crackers
Extra sharp cheese slice
Milk

DIRECTIONS:

COOK and DRAIN macaroni
SPRAY 9x13" pan with non-stick spray
CRUMBLE a layer of Ritz crackers into the bottom of the pan.
ADD - 1/2 of the cooked macaroni, THEN slices of extra sharp cheese.
ADD another layer of the crackers followed by the remaining half of the macaroni and
some more cheese.
CRUMBLE more crackers on the top.
POUR enough milk around the edges so that you can see it come around the edges.

BAKE at 350 for around 45 minutes

* This has been a favorite at every family gathering for over 40 years!

GREAT AUNT LEONA'S MOIST CORN BREAD


OVEN 425 degrees

INGREDIENTS:

3/4 cup sugar
2 eggs
2 cups flour
1 cup corn meal
1 TBSP Baking Powder
1 tsp. salt
1 TBSP melted butter
1 1/2 cups milk

DIRECTIONS:

MIX sugar and eggs
ADD flour, corn meal, baking powder and salt
ADD butter and milk
BEAT up quickly
BAKE in greased 9 x 13" baking pan at 425 degrees for 20 minutes
